Immune Boosting Butternut Squash and Tuscan Bean Soup

There’s nothing like 4 feet of snow and -30 temperatures to make me think about hot soup for dinner, so it should be no surprise that this happened.
Butternut Squash and Tucson Bean soup!

Not only is this soup warm and delicious, it’s also loaded with Immune boosting nutrients!!
First of all I’d like to say Hello Beta-Carotene!! Butternut squash is loaded with Beta-Carotene which is converted into Vitamin A in our bodies. Vitamin A helps to protect against infection, cancer, stroke and heart disease! It also helps the body maintain electrolyte balance, literally essential to your heart beat.
Up next, Kale has an abundance of the phytonutrient lutein which scientists believe may be even MORE protective against cancer than Beta-Carotene! It also helps to regulate estrogen and blood pressure, AND it contains more calcium than milk and is much more bioavailable, meaning, easier for the body to use.
Let’s not forget about the navy beans that are loaded with fibre for good digestion and protein 💪🏼 among many other vitamins and minerals that are essential to a strong immune system and good health!
Although I ate it for it’s warming factor, this is a go to for Immune support!
